Pane e pomodoro.
Un pizzico di sole, le onde dell'oceano che sembra il mare. Il buono di una zuppa densa e rinfrescante. Un pomeriggio aperto e un libro da iniziare.
Costruisco così la mia estate cittadina.

per 4 persone
pomodori maturi a grappolo 1 kg
pane raffermo 150 gr
mandorle tostate 30 gr
aglio 1 spicchio
aceto balsamico 1 cucchiaio
olio extra vergine 4 cucchiai
sale, pepe, acqua q.b.
Per la salsa al cetriolo
cetriolo 1
cipolla rossa piccola 1/2
pomodoro (facoltativo) 1/2
lime 2
coriandolo fresco, sale, pepe q.b.
pane raffermo 150 gr
mandorle tostate 30 gr
aglio 1 spicchio
aceto balsamico 1 cucchiaio
olio extra vergine 4 cucchiai
sale, pepe, acqua q.b.
Per la salsa al cetriolo
cetriolo 1
cipolla rossa piccola 1/2
pomodoro (facoltativo) 1/2
lime 2
coriandolo fresco, sale, pepe q.b.
La mia è la versione very very
Preparare la salsa al cetriolo (salsa nel senso messicano del termine, non è un sugo ma una salsa, sí?): sbucciare il cetriolo e tagliarlo a cubetti insieme al pomodoro. Mescolarli con poca cipolla tritata e condire con succo di lime, sale, pepe e coriandolo fresco tritato. Coprire con pellicola e tenere in frigo.
Per la zuppa, tritare il pane a cubetti e bagnarli con 4 cucchiai di acqua. Tenere da parte. Sbucciare i pomodori tuffandoli per qualche secondo in acqua bollente e tagliarli a pezzi. Frullarli con il loro liquido insieme al pane ammollato e non strizzato, l'aglio, le mandorle tostate, olio e aceto. Insaporire con sale e pepe e se necessario aggiungere altra acqua.
Tenere il salmorejo in frigo almeno due ore. Servirlo ben freddo, guarnendo ciascun piatto con un cucchiaio di salsa al cetriolo.
